Baked Cucumber Chips

I've been looking for something new to dip into salsa since I gave up tortilla chips for a while.

Ingredients:
Cucumbers
Salt
Garlic powder
Cayenne
(or any other seasonings you want)

Instructions:
Preheat oven to 170°F
Slice the cucumbers into rounds (mine were about 1/8" thick).
Mix cucumbers in a bowl with seasoning.
Place a cooling rack on a baking sheet.
Spray the rack with non-stick spray.
Spread cucumber slices on rack.
Bake for 2½-3 hours, until crispy and lightly browned.
Mine took the full time.
Remove, Cool and enjoy.

Keep in mind they are going to shrink....a lot. Make extra.
These ended up too small to really scoop the salsa, but they work :)

Orange Fluff

Ingredients:
1 orange
vanilla cream stevia (to taste)
2-3 Tablespoons water
1 Tablespoon milk (optional)

Instructions:
Peel Orange.
Separate segments and place in freezer for 1-2 hours.
Add all ingredients to food processor and pulse until smooth.

This is the closest thing to ice cream I will be having for a while, but it is really pretty good.

Spinach "Chips"

Ingredients:
Fresh Spinach
Salt
Garlic powder

Instructions:
Preheat oven to 350° F
Line a baking sheet with parchment.
Place spinach on sheets in a single layer.
Sprinkle with salt and garlic powder.
Bake for 5- 8 minutes
When they are crispy, but not brown, remove and enjoy.

Make sure to check them after 5 minutes. The first time I made these they took 7 minutes. The next time, I set the timer for 6 minutes, and they were pretty "well done" but still mostly edible.

160 Days

Until my wedding day!
All the big stuff is taken care of. Most of the small things too.
I wont lie, I spent a lot of time obsessing along the way.
Now to focus on me.

I look good in my dress, but I want to look great!
I started C25K and it has slowly been changing how I look and feel, and I'm definitely improving on the distance vs time aspect, which I guess is kind of the point...but it still feels like something is missing.
I really need to get my butt into gear if I want to look and feel amazing when I walk down the aisle. Oh, and on the beach in Jamaica, of course!

I don't eat that much, but what I eat isn't always the healthiest.
Add in the enabling and "suggestions", from the other half, and we end up with pizza 2 nights a week. Don't get me wrong, I'm completely guilty of the "suggestions" too.

Enter everybody's favorite word (haha, right!). Ugh. But the time has come.
