Baked Cucumber Chips

I've been looking for something new to dip into salsa since I gave up tortilla chips for a while.

Ingredients:
Cucumbers
Salt
Garlic powder
Cayenne
(or any other seasonings you want)

Instructions:
Preheat oven to 170°F
Slice the cucumbers into rounds (mine were about 1/8" thick).
Mix cucumbers in a bowl with seasoning.
Place a cooling rack on a baking sheet.
Spray the rack with non-stick spray.
Spread cucumber slices on rack.
Bake for 2½-3 hours, until crispy and lightly browned.
Mine took the full time.
Remove, Cool and enjoy.

Keep in mind they are going to shrink....a lot. Make extra.
These ended up too small to really scoop the salsa, but they work :)

Spinach "Chips"

Ingredients:
Fresh Spinach
Salt
Garlic powder

Instructions:
Preheat oven to 350° F
Line a baking sheet with parchment.
Place spinach on sheets in a single layer.
Sprinkle with salt and garlic powder.
Bake for 5- 8 minutes
When they are crispy, but not brown, remove and enjoy.

Make sure to check them after 5 minutes. The first time I made these they took 7 minutes. The next time, I set the timer for 6 minutes, and they were pretty "well done" but still mostly edible.
